The Poggio a Muscoli farm is situated on one of the most beautiful panoramic hills of Tuscany, looking towards Fiesole and Florence. This agricultural family business is devoted to the manufacture of extra-virgin olive oil, to lavender, to healing herbs, to the rediscovery of iris and, for several years, to saffron culture.
The field includes a range of panoramic earthworks and is mostly devoted to oil manufacture. The orchard includes almost a thousand olive trees of typical Tuscan varieties (gentile, moraiolo, pendolino), while aromatic herbs are cultivated on the smaller terraces, such as lavender and rosemary, along with saffron, a bulbous plant that finds a favourable environment in the Mediterranean climate of Fiesole.
“Saffron begins to flower with the first autumn rains, develops its vegetation during winter and spring and then hibernates, as its leaves wither and it survives on the soil as a bulb-tuber in the warmer and drier summer season.Once used for the manufacture of some medicines that are no longer in use, saffron is used in cuisine as a spice, providing a pleasant and aromatic taste.”
