A violet tapestry of fragrant saffron flowers can be seen among the olive trees. The flowers are beautiful to look at, but also good to taste.Early in the morning, people collect the flowers when they are still closed, because their perfume is best preserved this way. Then, during the day, armed with holy patience, they peel them petal by petal. It is best to work in pairs, as time passes more quickly with a bit of talk!
Finally, the most delicate step: desiccation. This is a task that Ms Silvia leaves to no one, because she has always trusted only her own eyes and hands for choosing the exact moment of correct dehydration, a compulsory prerequisite for the optimal quality of her product. Once saffron has been obtained, it is time to invent new recipes together!

Do you want to visit an unusual Florence?Hold on to your map and follow us in the quest for the small wine doors.We will take the old medieval ways to the heart of Florence, searching together for the ancient little wine doors, on the unique steps of the Carro Matto.We will discover Florence by means of anecdotes and trivia, reaching the most famous and typical points of the city.You will see that the walls of some palaces of the historical centre enclose some curious small-sized openings, used to sell wine directly in the street and named the wine niches.The habit of selling wine directly from the noble palaces dates more or less from the 16th and 17th century and the niches allowed for the discrete and immediate sale of wine in the street, avoiding any unnecessary intermediaries.Following our map, you will manage to discover how to find the mysterious small doors!

When you come find us, we will start with a walk in the vineyard, so that we may observe together the particularities of our area, Fiesole, explaining to you why we have chosen to protect our territory, following biological methodology.
The curious chicken that walk freely within the vineyard will accompany us in our walk.Once in the vineyard, we will show you how the grape harvest takes place and how the quality of a wine cannot ignore the quality of the grapes it is produced with.Then we will move to the warehouse, in order to see the machinery that we use for our transformation.
This machinery respects the grapes and allows us to select and control every grape that will come to create our wine.You will also get acquainted with our aging choices, as we exclusively use French oak barrels.It is not enough to pay attention to the barrel, as the wine must also rest and grow mature in a bottle, in a protected environment, both in terms of temperature and humidity.Only after having understood all the passages that allow us to arrive to that delicious beverage and its deep connection to our territory will you be ready to try our wines and have the pleasure of tasting them where they are born!

Here, in Villa di Campolungo, we like to cook and share our traditional Tuscan recipes.This is why we provide cooking classes for our guests.
Our cooking classes are adapted to adults, children, families and small groups of friends.Cooking together is an experience that reinforces personal relations, brings calm to family relations and helps us know better our dear ones.
The class lasts about four hours, during which the “wannabe cooks” help cook a menu including a starter (crostini or something else), a homemade pasta course (ravioli, tagliatelle, etc.) or a meat course and, finally, a dessert (almond biscuits, torta della nonna, etc.).
At the end of the lesson, in the panoramic garden or in the room, the “wannabe cooks” may finally taste the courses they have prepared from scratch, accompanied by good local wine!
If you want to visit a historical Florentine farm, on the extraordinary peaks between Fiesole and Settignano, looking towards Florence, you must come to the Fattoria di Maiano del Conte Miari Fulcis.
Here you will fine, in the 300 hectares of land, almost 20,000 silvery olive trees.The extra-virgin olive oil of the Maiano Farm is exclusively obtained from olives grown on it fields and the squeezing is made in the farm’s own olive press, with innovative techniques, such as nitrogen processing.The product of excellence of such processing is the Laudemio, an extra-virgin olive oil with a unique personality and a fresh and fruity fragrance.During the visit to the olive press you will be presented the olive orchard, and then you will go to the inside areas, where the machinery and the production process will be presented.At the end of the itinerary, we will have the opportunity to taste the extra-virgin olive oil produced by the farm.

Wrapped up in the magic of the place, between the Mugnone river and the Etruscan hill, Emy welcomes you to its seminar dinners.You will discover the secrets and the therapeutic properties of the herbs and spices tried during dinner.The seminar dinners will take place under an Arabic tent, seated on cushions and carpets, under the light of 100 candles and accompanied by music of uds and darbukas.After dinner, we will wait together for the appearance of the stars, enveloped in perfumed incense and fraught with stories on the Arabic world, dances and songs.
OLIVE OLI MAKES YOU PRETTY!
It has been scientifically proved that extra-virgin olive oil is particularly indicated not only as a healthy spice, but also as a screen against free radicals causing aging, since it is rich in monounsaturated and polyunsaturated fats, besides having a significant amount of polyphenols and tocopherols such as vitamin E; moreover, its very low acidity and easy metabolisation within the human body confirm it as a fantastic cosmetic product.
Antonio Pieri will share with you these and many other secrets on extra-virgin olive oil, as he opens to you the gates of his farm, where you will discover that combining the tradition of high productive quality and new cosmetic technologies, as well as using high quality active principles such as Biological “Toscano IGP” extra-virgin olive oil, one may manufacture excellent cosmetic products as natural as possible, according to the requests of the consumers paying attention to health and welfare. You will become acquainted with “Prima Spremitura”, a line of organic cosmetic products good for skin: detergents and eye creams, shampoo, bath foam, soaps, hand and body creams, conditioners, etc., so that you may actually experiment a genuine bath in extra-virgin olive oil!
Casale giuncarelli offers, on demand, "Home Cooks" to organize social occasions for groups who want to treat yourself to "delicious" traditional dinners or tastings of special dishes. Everything is prepared with traditional Tuscan recipes with meat, fish or vegetables. Towards the autumn are also offered recipes of historic Florentine family of Medici. This menucan also be madein the summerbut for a groupof 10people minimum.
"Cuochi a casa" can also prepare snacks-dinner starting at around five pm and end at about nine. The dishes are served as "finger food" for a friendly informal time for families with children and groups of friends looking to enjoy many little details of the local cuisine.
“Home Cooks” proposals are all manufactured using raw materials strictly seasonal, and short chain organic, produced by farms in a radius of 40km from Fiesole.
The menu offered vary on seasonal produce available. Other changes may be introduced on the basis of the needs or tastes of the guests. The menus are accompanied by wines DOCG "pouring in" matched by “Cuochi a casa”.
Tuscany is synonymous to extra-virgin olive oil and the hills of Fiesole are especially known as one of the areas where high quality extra-virgin olive oil is produced. Our extra-virgin olive oil is manufactured according to the rules of biological agriculture, exclusively with olives harvested from the farm’s orchards. Olives are harvested in November, after the first frost, are carried to the olive press few hours after harvest, in order to obtain a genuine and proper “olive juice”, which is absolutely natural and very rich in antioxidants. Take your time to taste a genuine Tuscan oil, directly from its producer!
You may taste extra-virgin olive oils by comparison: you may learn how to assess an oil, how to evaluate it, how to use it in order to potentiate the taste of accompanying food. But, above all, you will understand how important a good extra-virgin olive oil is for your health!
Fiesole and Firenze are found in the manufacture area of Chianti wine. Therefore, you cannot lose the opportunity of touching the “raw material” of one of the world’s most famous wines:the Sangiovese, a vine variety that for whole centuries has represented wine tradition in Tuscany.
If you want to come and visit us, we will be very happy to organise a visit in the vineyard and the warehouse, so that you may observe the miracles of nature, of our vines and our grapes.
As we show you the marvellous balances of nature, you will be able to understand why we chose to protect our territory following the principles of biological agriculture.
We will try to help you understand how wines with different tastes and aromas may be obtained from the same vine variety, as well as show you the differences between the various varieties you can see in our farm:Merlot, Cabernet, Colorino, Canaiolo.
The visit to the vineyard can only end with a tasting of the gods’ nectar, so that we will complete it with a wine tasting.
Visits to the vineyard can only be made upon reservation. In case of bad weather we will not be able to go to the vineyard, but the tasting may take place.
